One of the things I love to do on weekends when I’m not working is cook! You can find me on a Saturday morning watching FOOD Network episodes of Barefoot Contessa, The Pioneer Woman, Giada at Home and more. Last Saturday I felt inspired to go to the grocery store and pick-up ingredients to make pizza, lasagna and albondigas soup for the week. Eugene likes to help of course, so we work together in the kitchen. I have to give him credit for the delicious marinara sauce he made. Our pizza started with a wheat crust, using quick rise yeast and was topped off with marinara, zucchini, Italian sausage, roasted garlic and mozzarella cheese. Looks good enough to eat, right?! We ate it ALL.

It was delicious – we were proud that we got a good thick crust with the pizza dough.

The next dish on the agenda was lasagna with whole wheat pasta, Italian sausage, marinara sauce, ground turkey, mushrooms, ricotta, mozzarella and parmesan cheeses. Eugene layered the pasta and filling in the pan. It’s surprising how easy it is to make and it makes the whole house smell like wonderful deliciousness.

 

 

I also wanted to make some soup, because it’s an easy item to reheat after a long day at work. I found a recipe for albondigas soup and of course tweaked it a little to my taste. I made large meatballs and added an assortment of vegetables: turnip, potato, carrot, celery and chayote squash. The finishing touch was fresh cilantro and corn tortillas to soak up the broth. FANTASTIC!
